Taste of South America!
How about a lovely Crawfish, Crab & Shrimp Ceviche?
Ingredients:
- 1/2 Pound Cleaned cooked Crawfish tail meat
- 1/2 Pound Jumbo lump crabmeat
- 1/2 Pound cooked small shrimp - peeled and deveined
- 1/2 C Lime Juice
- 1/2 C Ketchup
- 2 T Olive Oil
- 2 T hot sauce
- 1/2 C chopped cilantro
- 1/2 C diced red onion
- 1 C peeled,seeded & diced cucumber
- 1 C diced jicama
- 1 jalapeno chile pepper, seeded and minced
- Salt to taste
- 1 Large avocado, diced
Directions:
Place the crawfish, crab and shrimp in a large glass or ceramic bowl; pick any shells from the meat. Pour in the lime juice and gently mix, being careful not to break up the crab meat.
Cover and refrigerate for 1 hour. In a separate bowl, mix together the ketchup, hot sauce, and olive oil. Stir in the cilantro, onion, cucumber, jicama and jalapeno; add salt to taste. Gently fold this mixture into the seafood.
Refrigerate until ready to serve. Add the avocado just before serving.TIP: Place each serving in a martini or margarita glass and garnish with slices of lime. Perfect as an appetizer or a main dish!

The beautiful city of Seville, the capital of Andalusia in the south of Spain is romantic, dramatic and exciting! Wander streets lined with cafes serving tapas and sherry wine during the day or go from bar to bar in the area of Santa Cruz in the evenings.
Don't forget the flamenco music! And Seville's most famous citizen - even though he's fictional - I'm speaking of Don Juan, of course!
The architecture is truly outstanding as well - there's a gothic Cathedral (third largest in Christendom), the Giralda tower, and the Plaza de Toros de la Maestranza. Even if you aren't interested in attending a bullfight, the museum is worth a visit.
So, when you're ready for a foray to southern Spain, make sure Seville is on your "list of places to see!"
